• standard for the nuclear magnetic resonance (NMR) spectroscopy analysis of levan produced byBacillus licheniformisNS032 in sugar beet molasses-based medium
• polysaccharide substrate to test the ability ofPrevotella copriisolates to grow when polysaccharides were provided as the sole carbon sourcein vitro
• substrate in levanase activity assay

Levan is also recognized for its immunomodulating and prebiotic actions.
