Zingerone is absent in fresh ginger but cooking or heating transforms gingerol to zingerone. The compound has potent anti-inflammatory, antidiabetic, antilipolytic, antidiarrheal, and antispasmodic properties. It behaves as appetite stimulant, anxiolytic, antithrombotic, radiation protective, and antimicrobial.
